DESCRIPTION Broccoli (Brassica oleracea italica) is sometimes called the ‘miracle food’. If in epidemiologic research more attention would be paid to which fruits and vegetables have the greatest benefit to our health, Brassica and its close relatives would be on top of the list, with broccoli firmly at the number one spot. This is probably due to the high levels of sulphuric compounds such as glucosinolates, glucoraphanins and particularly sulforaphane. Of all cruciferous vegetables, broccoli is the richest source of glucoraphanins, which in its turn the body can utilise to make sulforaphane.
The seeds and sprouts contain the highest amount of these compounds. On average, sprouts contain concentrations of glucoraphanins twenty to fifty times higher than are available in the mature broccoli plant. The concentrations are even higher in broccoli seeds. Brassica italica consists of standardised broccoli-extracts and therefore supplies guaranteed amounts of glucoraphanins and glucosinolates. Sulforaphane is one of the most powerful stimulators of the phase-2-enzyme system. This enzyme system uses the liver to remove foreign substances from the body. At the same time, sulforaphane inhibits the phase-1-enzyme system, where sometimes harmful intermediary compounds are formed. This has beneficial consequences for the condition of the detoxification system as well as for the antioxidant system. The consequences on a systemic level are translated to many different health improvements. Cooking broccoli inhibits the formation of sulforaphane.
